3 Recipes to Incorporate More Fresh Fruits and Vegetables Into Your Diet This Summer

As we venture into the summer months, we begin to have more options for fruits and vegetables that are in season and fresh for us to eat! I love to eat fruits and vegetables in the summer, whether it be just as a snack by themselves, or thrown into a recipe for my meals. 

Eating right is one of the best things you can do to take care of your body. It is so easy to do and fruits and vegetables are so yummy! Keep reading to find some of my favorite recipes you can make this summer. 

  1. Summer Peach Salad with Chicken

Salads are great because they can double as lunch or an appetizer for dinner! They are so quick and easy to make and are one of my favorite ways to throw in fruits or vegetables. My summer peach salad allows you to enjoy some fresh peaches with some added protein in the chicken. Peaches have a ton of health benefits, making them a great addition to your diet this summer, whether it be in recipes or by themselves for a snack!

  1. Egg White Scramble

My egg white scramble recipe is a great way to get your vegetables in for the day right away in the morning! It has mushrooms, peppers, and spinach, all providing a great start to your day. Mushrooms are a great source of fiber and protein and peppers double as being good for you and a nice colorful addition to your recipes! You can also spice this recipe up a little by making the scramble into a burrito – something fun for the whole family! 

3. Lemon Blueberry Frozen Yogurt Bites

The peak season for blueberries is June through August, making it one of the best fruits to eat during the summer and one of my personal favorites! This recipe is a fun way to get your fruits in while still treating yourself to a fun dessert. Blueberries are full of antioxidants and fiber, on top of being super yummy. These frozen yogurt bites will remind you of an ice cream sandwich, making them the perfect recipe to make this summer! 

I love these recipes because they are a great way to have fun with cooking, and still, get your health benefits through fruits and vegetables. There is so much we can do with food that I think sometimes people tend to focus on something that either only tastes good or only is healthy. I have found a great balance in these recipes and I hope you all try them out this summer!
