About Betsy Johnson
Betsy Johnson, an ISSA certified nutrition coach, has a passion for exercise and nutrition. She has been involved in athletics her entire life, and uses her experience as a Nutrition Fitness Coach to help others achieve their goals.
As a senior in high school, Betsy ran her first marathon, and has been running ever since. While training for races, she earned her marketing degree from Southern Methodist University in Dallas, Texas. She moved to Knoxville in 2002 and became more competitive in marathons and triathlons. She has completed 10 marathons around the country, 6 Boston Marathons, and numerous half-marathons.
Betsy has also competed in a variety of short-distance, Olympic distance, and half-iron distance triathlons. She is a 3-time All-American Triathlete. She earned first overall female in a number of these events. In 2012, Betsy won the Grand Prix race series in Knoxville as the top female throughout 4 triathlon events.
In September of 2014, she completed her first full-distance Ironman in Chattanooga. She placed 10th in her age group and in the top 8 percent of finishers. She also made the All-American team for the 2014-2015 USA Triathlon season.
During the time when Betsy was seriously training for these races, she began to educate herself on the nutrition side of these events. She understands what it means to compete, but most importantly, how to fuel your body correctly for an ultimate lifestyle change.
Betsy has a passion for nutrition and sports and loves to help people reach their ultimate goal in weight loss and lifestyle changes. She is married with two sons and has a career, so she understands a busy lifestyle, but also how to make it work within a person’s busy lifestyle. She is proven as a positive coach for making nutrition work within a variety of lifestyles.

Betsy is excited announce her recent partnership with Simon Hall Private Chef. By combining their talents of meal prep and nutritional education, Betsy and Simon have teamed up to bring you meal prep items that are gluten-free, Whole 30, Keto, or just all around healthy.
About Simon Hall Private Chef
Executive Chef, Simon Hall is a Knoxville Native, and a Webb School graduate, who studied at The New England Culinary Institute in Burlington, Vermont. He spent time traveling the world and sharpening his culinary skills in restaurants in San Francisco, Charleston, and Denver. For five years he lived in the British Virgin Islands where he worked at SurfSong Villa Resort on Beef Island, Executive Jet Management, and The Dove Restaurant on Tortola. Chef Simon returned home to Knoxville with his expertise in tow. As the Executive Chef of Chef Liberty, he earned himself the title of Knoxville’s top ten Chefs of 2010, and the restaurant the title of Knoxville’s newest hot spot.
