Ingredients:
- One package of Green Giant Carrot Veggie Spirals
- 6 ounces of cooked shrimpOven Baked Salmon
Pesto:
- 1 1/2 cups kale, leaves stems removed
- 1/2 cup fresh basil
- 2 cloves garlic
- 1/4 cup extra virgin olive oil
- 1/2 of a lemon, juiced
- 1/4 cup raw, unsalted cashews
- Salt and pepper to taste
Directions:
Combine all pesto ingredients into a food processor or blender. Blend until smooth and set aside. Prepare carrot spirals per package instructions. Grill shrimp until fully cooked (shrimp will become pink in color). Place heated carrots in a large bowl, pour pesto over carrots, and place cooked shrimp on top. Enjoy!
