8 oz Banza penne pasta
1 tbsp avocado oil
1 lb boneless, skinless chicken breasts, cut into pieces
½ tsp Himalayan Sea salt
¼ tsp ground pepper
1 tsp red pepper flakes
4 cloves garlic, minced
½ cup white wine vinegar
Juice of 1 lemon
5 cups fresh spinach
¼ cup parmesan or skim mozzarella cheese
- Cook pasta according to package instructions. Drain and set aside
- Heat oil in a large skillet over medium high heat. Add chicken, salt pepper, and red pepper flakes. Cook and stir occasionally until just cooked through, about 5 minutes.
- Add garlic and cook for 1 minute. Stir in wine vinegar and lemon juice and bring to a simmer.
- Remove from heat, stir in spinach and the cooked pasta. Cover and let stand until spinach is just wilted. Serve and add cheese to the top.
