Ingredients:
- 1/2 medium avocado
- Juice of 1/2 lemon
- 1-2 teaspoons spicy brown mustard
- 1/2 teaspoon garlic powder
- Salt and Pepper to taste
- 1 cup cooked chicken breast
- 1/2 cup chopped red and yellow bell pepper
Directions:
In a small bowl, mash the avocado with the lime juice and mix in the brown mustard, garlic powder, and salt and pepper. Mix in the chicken breast and bell peppers. Serve on sliced cucumbers, celery sticks, over greens (spinach, arugula), low sodium Ezekiel bread or whole wheat tortilla. Serves 1.
