¼ cup freshly squeezed lime juice
1 Tbs extra-virgin olive oil
1 tsp Chipotle chili seasoning
1 tsp honey
1 lb boneless skinless chicken breasts
2 cups diced mango
¼ cup onion
½ cup orange bell pepper finely chopped
½ tsp chili powder
Sea salt and black pepper to taste
- In a bowl whisk together 1/8 cup lime juice, olive oil, chipotle chili seasoning, honey,
salt, and pepper. Pour the marinade in a gallon size freezer bag, add in the chicken
breasts. Remove the air and seal the bag. Massage the marinade into the chicken for at
least 2 hours or overnight.
- Head the grill to 400º and spray the grates with cooking spray. Cook the chicken for 6-8
minutes then flip and grill another 6-8 minutes. Grill until the chicken reaches 165º. Let
the chicken for 5 minutes before slicing.
- While the chicken is grilling prepare the mango salsa. Combine the diced mango, onion,
bell pepper, chili powder, salt, and pepper in a bowl and stir to combine. Taste for
seasoning and serve on top of the chicken.
- Serve with cauliflower rice, brown rice, or a salad.
