5 oz salad greens (any mixture)
2 navel oranges, peeled and cut into sections
⅛ cup roasted pistachios
⅛ cup pomegranates arils
2 ounces crumbled feta cheese
Juice from 1 navel orange
2 tbsp honey
3 tsp white balsamic vinegar
2 tsp avocado oil
½ tsp dijon mustard
Salt and pepper
1. Place greens in a large serving bowl (or divide evenly among individual salads)
2. Arrange orange, pistachios, pomegranate arils over top of greens. Sprinkle with feta cheese.
3. For dressing, whisk together orange juice, honey, white balsamic vinegar, oil, mustard, salt, and pepper until the dressing is emulsified.
4. Keep dressing in a side serving bowl to keep salad fresh.
