Ingredients:
- 4 (6-ounce) cod fillets
- 1/2 tablespoon olive oil
- 2 cups cherry tomatoes
- 2 garlic cloves, minced
- 2 tablespoons balsamic vinegar
- 2 tablespoons chopped fresh basil or oregano
- salt and pepper to taste
Directions:
Heat a large nonstick skillet over medium-high heat and spray with cooking spray. Season cod with salt and pepper to taste. Cook 5 minutes on each side or until fish flakes easily with a fork. Remove cod from pan and cover with foil to keep warm. Add tablespoon olive oil to pan. Add tomatoes and garlic, sauteing for 3 minutes. Add balsamic vinegar and cook 1 additional minute or until tomatoes begin to burst. Stir in oregano or basil. Top fish with tomato mixture and serve with a side salad. Serves 4.
