Cucumber Salad

Ingredients:

  • 2 English Cucumbers, cut in half lengthwise then sliced
  • 1 pint Cherry Tomatoes, cut into quarters
  • 1 Red Onion, cut in half then sliced
  • Dressing:
    • 3 tablespoons White Balsamic Vinegar
    • 2 tablespoons Extra Virgin Olive Oil
    • Salt and pepper to taste
    • 1 teaspoon Italian Seasoning

Directions:

Prepare vegetables and toss together. Whisk the dressing ingredients until combined. Add the dressing to the vegetables and gentle mix together. Enjoy! Serves 4.
