Cucumber Tomato Salad

1 English cucumber sliced

2 cups baby tomatoes, sliced in half

1 tbsp parsley and basil

1 tbsp avocado oil

1 tbsp balsamic vinegar

Salt and pepper to taste


  1. Combine all ingredients in a bowl and toss well.
  2. Refrigerate for at least 20 minutes before serving.
