Egg White Breakfast Wrap

Ingredients:

  • 4 egg whites
  • 1/4 red pepper, chopped
  • 1/4 yellow pepper, chopped
  • 1/4 red onion, chopped
  • 1/2 cup spinach, chopped
  • 1/4 avocado, mashed
  • 1 whole wheat tortilla
  • Optional topping, salsa

Directions:

Spray skillet with non-stick cooking spray, saute vegetables over medium high heat until soft, add egg whites. Spread avocado onto tortilla (warmed if desired) and add egg mixture on top. Roll up tortilla and enjoy!
