Egg White Scramble

Ingredients:

  • 1 tablespoon extra virgin olive oil
  • 4 egg whites
  • 1/4 cup of sliced mushrooms
  • 1 cup of fresh spinach
  • 1/4 red pepper

Directions:

Heat oil in a skillet over medium heat. Add vegetables and cook for 1 minute. Add egg whites and cook until desired doneness is achieved.
