Ingredients
2, 4 oz filet mignon
1 lb asparagus
½ tsp kosher salt
¼ tsp pepper
Olive oil spray
1 clove garlic
1 sprig rosemary
1 sprig thyme
Directions
- Remove steaks from refrigerator about 1 hour before cooking to allow them to come to room temperature. Preheat oven to 400 degrees. Season with sprayed oil, salt, and pepper to both sides.Â
- Add olive oil, garlic, rosemary and thyme to cast iron pan.
- Heat over medium-high heat. Add steak to hot pan, sear for 2-3 minutes on both sides. Add Asparagus to the sides of the skillet and season with salt and pepper. When the steaks have browned, insert the thermometer into the thickest part of the steak and transfer to the oven.
- Finish cooking when the internal temp reaches 125 degrees for medium-rare (about 10 minutes). Let steaks rest in pan for at least 5 minutes. Remove filets and asparagus from the skillet and enjoy!
