Ingredients
1 lb boneless, skinless chicken breast, trimmed
¼ tsp salt
¼ tsp cayenne pepper (may sub for black pepper)
¼ cup fresh lemon juice
2 tbsp avocado oil
½ tsp cumin
¼ tsp salt
2 cups fresh riced cauliflower
2 cups flat-leaf parsley leaves, finely chopped
½ cup fresh mint leaves finely chopped
½ small red onion, finely chopped
1 cup diced cucumber
1 cup cherry tomatoes, halved
⅛ cup chopped green onions
Directions
- Preheat the grill to medium-high heat. Season chicken breasts with avocado oil spray, salt, and pepper. Grill the chicken, occasionally turning. Grill until internal temperature reaches 165 F, about 10-12 minutes.
- Whisk lemon juice with oil, cumin, ¼ tsp salt in a large bowl. Add cauliflower rice, parsley, mint, onion, cucumber, tomatoes, and green onions and mix until coated.
- Thinly slice grilled chicken and serve over the herbed cauli rice mixture.
