- 2 tablespoons extra virgin olive oil
- 2 cloves of garlic, minced
- 1 lemon, juiced and zested
- salt and pepper to taste
- 4 chicken breasts, about 4-5 ounces each
Whisk marinade ingredients together. Place marinade and four chicken breasts in a gallon ziploc bag. Marinate the chicken in the refrigerator at least 30 minutes. Preheat oven to 425 spray a lined baking sheet with cooking spray. Lay chicken on the sheet side by side. Bake for 20 minutes. Serve with brown rice or quinoa and your favorite veggies.
