Mediterranean salad and grain bowl

  • ½ cup cooked brown rice
  • 2 cups spinach and spring mix
  • 3.5 oz grilled chicken breast
  • ⅓ cup chopped cucumbers
  • ½ cup grape tomatoes
  • 1 tbsp hummus
  • ⅛ cup chopped onion
  • ⅛ cup fat-free feta
  • Squeeze of lemon


  1. Toss brown rice and salad mix in a large bowl.
  2. Top with chopped chicken, cucumbers, tomatoes, hummus, onion, and feta. Squeeze lemon on top.
