- ½ cup cooked brown rice
- 2 cups spinach and spring mix
- 3.5 oz grilled chicken breast
- ⅓ cup chopped cucumbers
- ½ cup grape tomatoes
- 1 tbsp hummus
- ⅛ cup chopped onion
- ⅛ cup fat-free feta
- Squeeze of lemon
Directions
- Toss brown rice and salad mix in a large bowl.
- Top with chopped chicken, cucumbers, tomatoes, hummus, onion, and feta. Squeeze lemon on top.
