Ingredients:
- 1 1/2 teaspoons chili powder
- 1 teaspoon cumin
- salt and pepper to taste
- 4 chicken breasts, cut into strips
- 1 red pepper, cut into strips
- 1 orange pepper, cut into strips
- 1 yellow onion, sliced
- 1 teaspoon salt
- 2 tablespoons extra-virgin olive oil
- fresh cilantro
- 1 lime, juiced
- 1 avocado, sliced
Directions:
Preheat oven to 425 degrees. Place chicken strips into a large bowl. Mix seasonings into a small bowl and stir together. Pour into bowl with chicken and massage into the chicken with your hands. Layer the vegetables onto a baking sheet, then place the chicken on top. Pour olive oil over chicken and vegetables and stir to combine. Bake for 18-20 minutes, or until chicken is cooked. Serve with fresh cilantro, lime juice, and sliced avocado. Serves 4.
