We’re concluding the Cuisinart series the same way we end a delicious meal… with dessert! 🍨 This is a great substitute when you’ve got a sweet tooth, and it took no time to make. These cottage cheese mint chip desserts are to die for and will satisfy that ice cream treat.
Ingredients:
1 ½ cup of 2% cottage cheese (I used Good Culture)
⅓ cup of sugar free syrup
1 tsp of vanilla extract
¼ tsp of peppermint extract
⅓ cup of Lilly’s dark chocolate chips
3 small drops of green food coloring
2 T Truvia (or sweetener of choice)
Directions:
1. In the mini cuisnart, blend the cottage cheese, syrup, vanilla extract, peppermint extract and green food coloring until smooth.
2. Spread the ice cream equally in four small ramekins (or shallow dish, bowl or loaf pan).
3. Blend in the chocolate chips or fold with a wooden spoon after blending all other ingredients.
4. Cover the containers and freeze for at least 2 hours or until firm.
5. Remove the ice cream from the freezer and let it sit at room temperature for a few minutes to let the ice cream thaw.
6. Enjoy your sweet treat without the guilt!
