Don’t overthink and overcomplicate meals. 🤌 This Pesto Mozzarella Stuffed Chicken is so easy to make and absolutely delicious. It is such an easy weeknight meal because you only need three ingredients and some spices and it took me 15 minutes to the air fryer. You can pair this chicken with a side salad and some veggies and dinner is ready in minutes.
Ingredients:
3 large skinless, boneless Chicken Breast
3 T of Pesto (1 T of pesto on each butterfly chicken breast)
3 Slices of Fresh Mozzarella
Spices: Salt, pepper and smoked Paprika
Directions:
1. Butterfly your chicken breasts, add a tablespoon of pesto to each breast and your slice of mozzarella cheese. Fold each breast over and add your spices. I put toothpicks in each breast once it was folded over so the ingredients would cook in the breast and not fall out of it in the air fryer.
2. Cook in the air fryer on high at 400 degrees for 15-17 minutes until cheese is melted and chicken is golden brown. Enjoy! You will want to make this on repeat! 🙌
