Salmon Tacos with Strawberry Salsa

Ingredients:

  • 1 lb salmon filets
  • Salt and pepper
  • Garlic powder
  • Chili powder
  • 2 cups strawberries, diced
  • 1 avocado, diced
  • ¼ cup red onion, diced
  • ¼ cup fresh cilantro, diced
  • Juice of 1 lime
  • Sea salt and black pepper
  • 8 corn tortillas

Directions:

  •  Preheat grill to medium-high heat. Season salmon with salt and pepper. Add chili and garlic powder if desired.
  •  Oil the grill grates and place salmon on grill (flesh side down). Cook for 6-10 minutes until reaching desired doneness. Let the salmon rest for several minutes prior to removing the skin. Flake apart the salmon with a fork.
  • In a medium bowl, combine the strawberries, avocado, onion, cilantro, lime juice, salt, and pepper.
  • Grill the tortillas for about a minute and fill them with flaked salmon and topped with the strawberry salsa.
