Ingredients:
- 1 lb salmon filets
- Salt and pepper
- Garlic powder
- Chili powder
- 2 cups strawberries, diced
- 1 avocado, diced
- ¼ cup red onion, diced
- ¼ cup fresh cilantro, diced
- Juice of 1 lime
- Sea salt and black pepper
- 8 corn tortillas
Directions:
- Â Preheat grill to medium-high heat. Season salmon with salt and pepper. Add chili and garlic powder if desired.
- Â Oil the grill grates and place salmon on grill (flesh side down). Cook for 6-10 minutes until reaching desired doneness. Let the salmon rest for several minutes prior to removing the skin. Flake apart the salmon with a fork.
- In a medium bowl, combine the strawberries, avocado, onion, cilantro, lime juice, salt, and pepper.
- Grill the tortillas for about a minute and fill them with flaked salmon and topped with the strawberry salsa.
