Salsa Verde Carnitas Tacos

  • 2-3 lbs pork tenderloin
  • Pink salt
  • Black pepper
  • 16 oz salsa verde
  • ½ onion
  • 4 cloves garlic, minced


  • 3 corn street tortillas
  • 100 g carnitas mix
  • ½ cup Shredded lettuce
  • ¼ cup salsa or pico de gallo
  • ¼ diced avocado
  • 1 tbsp Cilantro
  • 1 tsp shredded low-fat mozzarella 
  • Squeeze of lime


  1. To make carnitas. Trim fat and pat dry. Cut into pieces, about 4 inches long. Season with salt and pepper and sear on all sides in an instant pot on the saute setting. Cover with salsa verde, onion, and garlic. Seal the lid and vent and set for 45 minutes on high. When done leave for 10-15 minutes then open vent and lid.
  2. Shred and mix together.
  3. To assemble the tacos, spray a medium-hot pan with cooking spray. Cook until crispy on each side and place on a paper towel. Top tacos with carnitas and cheese. 
  4. Bake at 400 degrees for a few minutes.
  5. Remove from the oven and top with lettuce, salsa, avocado, cilantro and lime juice.
