Ingredients:
- 1 pack grilled shrimp from Betsy’s Pantry
- 1 ripe avocado, peeled and chopped into 1/2″ chunks
- 1 head romaine lettuce
- 1 medium tomato, chopped
- 3 green onions, finely chopped
- 1 large orange or yellow pepper, chopped
- 1 jalapeño pepper, seeded and finely chopped
- 3 cloves of garlic, finely chopped
- Juice of 1 lime
- Olive oil, for drizzling
- Fresh cilantro leaves, chopped, to taste
- Salt and pepper to taste
Directions:
Put all vegetables and shrimp in large bowl over lettuce. Drizzle lime juice and olive oil on top, sprinkle with cilantro and salt and pepper to taste. Serves 4.
