Shrimp and Avocado Salad

Ingredients:

  • 1 pack grilled shrimp from Betsy’s Pantry
  • 1 ripe avocado, peeled and chopped into 1/2″ chunks
  • 1 head romaine lettuce
  • 1 medium tomato, chopped
  • 3 green onions, finely chopped
  • 1 large orange or yellow pepper, chopped
  • 1 jalapeño pepper, seeded and finely chopped
  • 3 cloves of garlic, finely chopped
  • Juice of 1 lime
  • Olive oil, for drizzling
  • Fresh cilantro leaves, chopped, to taste
  • Salt and pepper to taste

Directions:

Put all vegetables and shrimp in large bowl over lettuce. Drizzle lime juice and olive oil on top, sprinkle with cilantro and salt and pepper to taste. Serves 4.
