Ingredients:
- 10 oz shrimp
- 2 eggs
- 2 cups broccoli florets
- 1 cup cole slaw mix
- 1 chopped onion
- 2 tablespoons chopped cashews
- 2 tablespoons low sodium soy sauce
- 2 tablespoons sesame seed oil
- salt and pepper to taste
Directions:
Add sesame seed oil to a large saute pan and preheat over medium-high heat. Add chopped vegetables and cook until soft, about 5-7 minutes. Spray a grill pan with nonstick spray and grill shrimp over medium-high heat until shrimp turns pink. In another medium saute pan, scramble eggs and cook through. To serve, layer vegetables, shrimp and soy sauce in a bowl.
