1 white onion, finely chopped
4 celery ribs, chopped
3 medium carrots, diced
8 cups chicken bone broth
2 lb boneless skinless chicken breasts
3 cups wild rice
1 tbsp rosemary, finely chopped
2 cups baby spinach, chopped
Salt and pepper
8. Add the onion, celery, carrots, bone broth, chicken, wild rice, and rosemary to the bowl of the slow cooker. Cover and cook on high for 3-4 hours or low for 6-8 hours until rice is tender.
9. Shred or chop the chicken (either in the bowl or out) and return the chicken to the slow cooker and mix.
10. Stir in the baby spinach until combined.
11. Season with salt and pepper
