Thai Chopped Chicken Salad

Ingredients:

  • 3 cups boston lettuce, chopped
  • ⅛ cup chopped cucumber
  • ⅛ cup shredded carrots
  • 1 red bell pepper, chipped
  • ½ cup shredded cabbage
  • 2 tbsp green onion, chopped
  • ⅛ cup red onion, sliced
  • ⅛ cup cilantro, chopped
  • ¼ small avocado, sliced
  • ¼ cup edamame
  • 3.5 oz grilled chicken
  • 1 tbsp Trader Joe’s spicy peanut vinaigrette

Directions

  1. Toss all ingredients together. Top with salt and pepper if desired.
