Ingredients
2 medium zucchinis, diced
½ onion, diced
1 orange bell pepper, diced
½ cup mushrooms, diced
1 tbsp avocado oil
1 can black beans
½ cup shredded mozzarella cheese
½ tsp garlic powder
¼ tsp oregano
¼ tsp onion powder
¼ tsp black pepper
¼ tsp paprika
5 Xtreme wellness tortilla wraps
Top with ¼ avocado if desired
Directions
- Heat olive oil in a skillet and add the veggies. Cook for 5-7 minutes. Once soft mix in all the spices, then add in the black beans and cook for 7 more minutes.
- To assemble divide the cheese evenly and place in the center of each wrap. Top with the bean and veggies.
- Wrap individually if saving for later and can be frozen until ready to eat. Reheat on stove or microwave.
