Warm Winter Kale Salad

Ingredients:

  • 1 cup chopped kale
  • 1/2 diced apple
  • 1/2 cup roasted sweet potatoes, diced and warm
  • 1/2 cup cooked quinoa, warm
  • 1 tbsp slivered almonds
  • 1 cooked chicken breast, chopped and warm
  • 1 tbsp light balsamic vinaigrette, warmed

Directions:

Mix all ingredients vigorously in a large bowl and enjoy warm. Makes 1 serving.
