Ingredients:
- 4 cups Green Giant frozen riced cauliflower
- 1 1/2 Tbsp extra virgin olive oil
- 1/2 cup chopped green onions, plus more for toppings
- 2 cloves garlic, minced
- 1 orange pepper, diced
- 1 red onion, diced
- 1 (14.5 oz) can reduced sodium black beans, drained and rinsed
- 2 cups chopped, cooked chicken
- Salt and pepper
- 1 avocado, diced
- 1 tomato, diced
- 1/3 cup chopped fresh cilantro
- Zest from one lime
- 2 Tbsp fresh lime juice
Directions:
Heat oil in a 12-inch non-stick skillet over medium-high heat. Add onions, orange pepper and garlic and cook until vegetables are soft. Add in cauliflower rice and cook until heated through. Add in chicken and black beans, season with salt to taste and warm through. Stir in lime juice and zest. Serve with avocado, tomato, and fresh cilantro on top. Makes 4 servings.
