Ingredients:
- 2 pounds chicken breasts
- 1 cup quinoa, rinsed
- 2 pounds large sweet potatoes, peeled and chopped
- 1 can reduced sodium black beans, rinsed and drained
- 1 can no salt added petite diced tomatoes, undrained
- 1 teaspoon minced garlic
- 1 tablespoon chili powder
- 1 teaspoon ground cumin
- 1/4 teaspoon cayenne pepper
- 1/4 teaspoon garlic powder
- 1/2 teaspoon onion powder
- 1 teaspoon salt
- 1/4 teaspoon pepper
- 5 cups reduced sodium chicken broth
Directions:
Spray the slow cooker with nonstick spray. Add all ingredients to the crockpot and place on high for 3-5 hours or low for 7-8 hours. Remove chicken and shred with two forks, then place back into the crockpot. Stir all ingredients together and serve immediately. Serves 8.
