Air Fried Coconut Shrimp

Ingredients

  • 1 pound large shrimp, peeled and deveined
  • ½ cup almond flour
  • ½ tsp kosher salt
  • ¼ tsp garlic powder
  • ¼ tsp Onion powder
  • ½ cup panko bread crumbs
  • ½ cup almond meal
  • ½ cup unsweetened shredded coconut
  • 2 eggs beaten
  • Sauce
  • ½ cup plain greek yogurt
  • 1 tbsp sriracha sauce
  • 1 tsp chili powder

Directions

  1. In a shallow bowl, combine flour and salt, garlic, and onion powder. In another bowl combine the bread crumbs, almond meal, and coconut. In the third bowl, add the eggs.
  2. Dip the shrimp, one at a time, in the flour, then eggs, then the bread crumb mixture.
  3. Place shrimp in the air fryer basket and heat to 400 degrees.
  4. Cook until golden and cooked through, about 6 minutes.
  5. Combine ingredients to make the shrimp sauce.
