Ingredients
- Scallops
- 2, 4 oz halibut fillets
- 2 tbsp finely chopped unsalted pistachios
- 1 tsp grated parmesan cheese
- 2 tbsp panko bread crumbs
- ¼ tsp chili powder
- ⅛ tsp kosher salt
- ⅛ tsp black pepper
- 2 lemon wedges
Directions
- Lightly rinse each halibut fillet and pat dry with paper towels, then set aside
- In a small bowl combine the pistachios, parmesan, bread crumbs, chili powder, salt, and pepper.
- Spray each fillet with olive oil then sprinkle to coat with seasoning mixture.
- Place the halibut in air fryer basket without overlapping and air fry at 350 degrees for 5-6 minutes or until golden brown.
- Top with a lemon wedge for each halibut fillet
