2 15 oz cans chickpeas (drained and rinsed)
1 large cucumber, diced
⅔ cup red onion, diced
8 ounces feta cheese, crumbled
½ cup fresh parsley, chopped
¼ cup fresh mint
2 tbsp lemon juice
2 T extra virgin olive oil
¼ tsp black pepper
¼ tsp salt
