Fresh Vegetable Salad

Ingredients:

  • 1 large cucumber, diced
  • 4 medium tomatoes, diced
  • 1 ripe avocado, diced
  • ½ cup shelled edamame
  • ½ cup yellow peppers, diced
  • ½ red onion, thinly sliced
  • ¼ cup fresh cilantro, chopped
  • 1 tablespoon olive oil
  • 2 tablespoons lemon juice
  • Salt and pepper to taste

Directions:

Toss all ingredients in a large salad bowl and serve as a side dish to your meal. Serves 4.
