Ingredients
5-6 Jumbo shrimp, peeled deveined
1 tsp avocado oil
½ cup cherry tomatoes, halved
1 small radish, shaved thin
¼ avocado, diced
2 tbsp fresh cilantro
1-2 cups baby arugula
5 walnuts, crushed or whole
Directions
- Heat grill to medium-high heat. Pat shrimp dry and season peeled and deveined shrimp on both sides with salt, pepper, and olive oil. Place shrimp on skewers and grill for 1-2 minutes per side until bright pink and cooked through. Remove from grill and squeeze fresh lemon juice over shrimp to taste.
- Toast walnuts for a few minutes until fragrant.
- Combine all ingredients in a bowl and enjoy. Top with more lemon juice, balsamic vinaigrette, and/or avocado oil.
