Ingredients:
1.5 lb ground turkey breast
1 large onion, chopped
3 cloves garlic, finely minced
2 tbsp extra virgin olive oil
½ tsp salt
½ tsp pepper
1 ½ cups carrots, sliced
1 ½ cups celery, sliced
1, 28 oz can diced tomatoes, not drained
3 cups low sodium chicken broth
4 tbsp no sodium, tomato paste
1 tsp basil
1 tsp oregano
1 tsp thyme
½ tsp chili pepper flakes
¼ cup fresh parsley
Directions:
Brown the ground turkey and drain if necessary. Set aside. In a large pot add oil, and saute onion and garlic. Once fragrant, add the salt, pepper, carrots, and celery and saute for another 4 minutes. Add the tomatoes, broth, tomato paste, and the rest of the seasonings. Stir until combined, and bring to a boil. Once boiling, reduce heat to simmer for 30 to 35 minutes.
