High Protein Breakfast Bake

3 egg whites
⅓ cup cottage cheese
⅓ cup diced tomatoes
⅓ cup diced peppers
⅓ cup baby arugula or your favorite greens
Sprinkle of shredded parmesan cheese
Salt and pepper
Extreme wellness whole wheat 50-calorie tortilla (or tortilla of choice)

Mix cottage cheese and egg whites in a bowl. Spray a round baking pan with cooking spray. Place a whole wheat tortilla in the pan. Pour the cottage cheese and egg white mixture over the whole wheat tortilla. Add diced tomatoes, diced peppers, and arugula on top. Season with salt and pepper. Bake at 35 degrees for 15-20 minutes or until the eggs are set.
