Ingredients:
2 containers of steamed lentils from Trader Joe’s
1 pack of rice of choice (basmati rice used)
2 cups chopped carrots
2 cups green beans
2 cups chopped celery
2 cups chopped peppers
10-12 oz chopped kale
1, 32 oz container low sodium vegetable broth
½ chopped red onion
1 diced tomatoes
Black pepper to taste
1 tbsp chopped parsley
Directions:
Place precooked lentils, cooked rice, and all the remaining ingredients in the crockpot
Cook on low for 4 or 6 hours and enjoy!
