1.5 lbs sweet potatoes or lettuce
lb lean ground beef (I used 93/7)
Extra virgin olive oil
Salt free Mrs. Dash taco seasoning or taco seasoning of choice
Pico de gallo
Guacamole
Parmesan cheese
Doesn’t get much better than this… easy, healthy, and PACKED with flavor! You can even have it two ways with roasted sweet potatoes as your base or lettuce. This is perfect for a quick, simple, and delicious post-workout meal for lunch, or dinner! Great for meal prepping as well!
DIRECTIONS:
1. Prepare the Pico and guacamole, then set in the fridge. Or if you’re like me, I buy already prepared pico and guacamole.
2. Wash & dry the sweet potatoes, then dice them into small cubes. Put them in a large bowl, add olive oil and taco seasoning. Mix until well combined, then place evenly on a lined baking sheet. Bake at 425°F for 30-35 minutes. Give a quick mix halfway.
Pro tip: if you’re short on time, buy a bag of Simple Truth chopped frozen sweet potatoes and throw them in the air fryer to quickly roast.
3. While the potatoes are in the oven or air fryer, prep your ground beef. Add the ground beef to a greased large skillet over medium-high heat. Break it up, then add taco seasoning. Mix and add more if needed. I also like to add a bit of water or broth for extra moisture. Cook for 8-10 minutes, mixing frequently until done to your liking.
4. Remove potatoes from the oven and let cool for a few minutes.
5. Assemble your bowls on a bed of lettuce or sweet potatoes & ENJOY!
