  • 2 cups arugula
  • 1/4 cup mushrooms
  • 1/4 cup red onion
  • 6 cherry tomatoes
  • 1/2 cup cooked quinoa
  • 5 ounces cooked grilled chicken breast
  • 1 tablespoon extra virgin olive oil
  • 1/2 lemon, juiced

Directions:

Combine all ingredients together and enjoy!
