Ingredients
12 oz cooked chicken breast (3 chicken breasts), sliced
1 large can of Palmini
2 cups fresh packed basil leaves
3 garlic cloves
5 tbsp avocado oil
¼ cup parmesan cheese
Salt and pepper
1 cup chopped rainbow carrots, roasted or steamed
½ cup sliced cremini mushrooms, roasted or steamed
Directions
- Drain and rinse the Palmini well. Let soak in nut milk for about an hour.
- Chop basil and garlic in a food processor. Add oil and continue processing until the mixture becomes smooth. Season with salt and pepper.
- Add pesto sauce and Palmini to a large saucepan and add parmesan. Heat and add in chopped cooked chicken and cooked veggies. Mix together and serve.
