Ingredients
Scallops
3.5 oz scallops
1 tsp olive oil
1 tsp lemon pepper seasoning
¼ tsp paprika
Pepper to taste
Veggies
½ small summer squash
½ small zucchini
½ tsp olive oil
½ tsp garlic powder
½ tsp dried oregano
Salt and pepper to taste
Directions
- Preheat the air fryer to 400 degrees.
- Rinse and dry the scallops with a paper towel before cooking and discard the tough side muscle
- Spray the air fryer basket with olive oil spray. Season scallops on both sides with oil and seasonings. Place scallops evenly apart in the air fryer. Cook for 3 minutes, then flip to the other side to cook for another 3 minutes
- Increase heat in air fryer to 450 degrees. Wash the vegetables and trim off the ends. Slice the squash into rounds about 1/2 inch thick. Place the vegetables in a bowl and add the oil and seasonings and mix. Place the veggies in the air fryer and spread evenly. Cook for about 12-14 minutes until they have browned. At 8 minutes, redistribute the veggies in the basket.
