Scallops, Summer Squash, and Zucchini for One

Ingredients 

Scallops 

3.5 oz scallops 

1 tsp olive oil 

1 tsp lemon pepper seasoning 

¼ tsp paprika 

Pepper to taste 

Veggies 

½ small summer squash 

½ small zucchini 

½ tsp olive oil 

½ tsp garlic powder 

½ tsp dried oregano 

Salt and pepper to taste 

Directions 

  1. Preheat the air fryer to 400 degrees. 
  2. Rinse and dry the scallops with a paper towel before cooking and discard the tough side muscle
  3. Spray the air fryer basket with olive oil spray. Season scallops on both sides with oil and seasonings. Place scallops evenly apart in the air fryer. Cook for 3 minutes, then flip to the other side to cook for another 3 minutes
  4. Increase heat in air fryer to 450 degrees. Wash the vegetables and trim off the ends. Slice the squash into rounds about 1/2 inch thick. Place the vegetables in a bowl and add the oil and seasonings and mix. Place the veggies in the air fryer and spread evenly. Cook for about 12-14 minutes until they have browned. At 8 minutes, redistribute the veggies in the basket.
