Shrimp and Veggie Pad Thai

Ingredients

16 oz shrimp, peeled and deveined

1 large English cucumber, spiralized

3 large carrots, spiralized

¼ cup fresh cilantro, chopped

1 tsp sesame seeds

1/8 cup cashews, roasted and chopped

Ingredients for the Sauce

3 tbsp rice vinegar

1 tbsp sesame oil

2 tbsp low-sodium soy sauce

4 tbsp water

1 tbsp honey

2 cloves garlic, minced

4 green onions, chopped

Directions

  1. Combine ingredients for the sauce and whisk together.
  2. Cook shrimp on skillet or grill.
  3. In a medium bowl combine spiralized veggies and cilantro. Add shrimp and sauce to the veggies and gently combine. Top with sesame seeds and roasted cashews.
