1. Begin by microwaving a bag of carrots for 10 minutes, then gently smash them and pat them dry.
2. Place them on parchment paper and drizzle with olive oil.
3. Sprinkle generously with salt, pepper and parmesan.
4. Bake at 400°F for 20 minutes, then enjoy the deliciousness!
