Southwest Soup

Ingredients:

  • 1.5 cups corn
  • 1.5 cups no-sodium black beans
  • 2 diced medium tomatoes
  • 1 jalapeno, diced and seeded (or canned green chile)
  • 4 cups low sodium chicken bone broth
  • ½ tsp garlic powder
  • ¼ tsp cayenne pepper
  • ½ tsp salt
  • ½ tsp black pepper
  • 2 cups cooked, chopped chicken
  • Avocado, thinly sliced (optional)
  • Fresh cilantro (optional)
  • Fresh lime juice (optional)

Directions:

In a pot, combine corn, black beans, tomatoes, jalapeno, bone broth, garlic powder, cayenne pepper, salt, and pepper. Bring to a boil, then reduce to medium-high heat. Add chicken and stir to combine. Let simmer for 3 minutes, until the chicken is warm. Add sliced avocado as a topping if desired.
