Ingredients:
- 1.5 cups corn
- 1.5 cups no-sodium black beans
- 2 diced medium tomatoes
- 1 jalapeno, diced and seeded (or canned green chile)
- 4 cups low sodium chicken bone broth
- ½ tsp garlic powder
- ¼ tsp cayenne pepper
- ½ tsp salt
- ½ tsp black pepper
- 2 cups cooked, chopped chicken
- Avocado, thinly sliced (optional)
- Fresh cilantro (optional)
- Fresh lime juice (optional)
Directions:
In a pot, combine corn, black beans, tomatoes, jalapeno, bone broth, garlic powder, cayenne pepper, salt, and pepper. Bring to a boil, then reduce to medium-high heat. Add chicken and stir to combine. Let simmer for 3 minutes, until the chicken is warm. Add sliced avocado as a topping if desired.
