Ingredients
- 1 small or medium spaghetti squash
- 1 tbsp olive oil spray
- 1 lb ground turkey
- 16 oz can crushed tomatoes
- 2 cup baby spinach
- ¼ cup mozzarella cheese
- ½ onion, diced
- 1 tsp Mrs Dash low sodium italian seasoning
- ¼ tsp Garlic powder
- Red pepper flakes
Directions
- Preheat oven to 400 degrees. Line a baking sheet with parchment paper.
- Poke holes in squash and place in microwave for 2-3 minutes.
- Cut spaghetti squash in half lengthwise, and scoop out the seeds. Spray the inside with olive oil spray and pink salt. Place the cut side down on baking sheet
- Bake for about 40 minutes or until the squash pulls spaghetti easily with a fork.
- On medium, cook the onion in a skillet with a light amount of olive oil spray. Once cooked, add the ground turkey and break as it cooks.
- Add crushed tomatoes and spinach and season with salt, pepper, italian seasoning, garlic powder, and crushed red pepper. Bring to a simmer
- Once the spaghetti squash is cooked, remove from oven and flip so the cut side is up and cook for another 3 minutes. Remove from oven and scrape the squash with a fork to pull apart spaghetti strands.
- Add a scoop of sauce to each have, combine and top with some sauce and the cheese.
- Broil on low for 5 minutes until cheese melts.
