2 tbsp salsa
¼ tsp chili powder
salt and pepper to taste
1 tsp avocado oil
¼ cup diced onion
½ cup cooked chicken breast, chopped
½ cup cooked cauliflower rice or quinoa
¼ cup black beans and corn (optional)
Top with diced avocado, plain Greek yogurt, cilantro, fresh lime juice
- In a bowl, combine oil and onion. Microwave until softened, 1-2 minutes.
- Add chicken, cauliflower rice, beans (if desired), salsa, chili powder, salt, and pepper to
taste and stir. Microwave for another minute or two.
- Serve with desired toppings.
